Anyway the Jackson Walk tallied up $ 110,000 which is about 30,000 less than last year but the good news is the donations are still coming in! Hopefully we make the goal of $140,000!
Now I can start working on my Christmas cards along with some birthdays coming up. I feel like it's been forever since I sat down for days and just made cards! I miss it.
And while I'm doing this I am also working on the Comedy Murder Mystery Dinner I hope to have in March 2011. THAT is going to be a riot!!! Can't wait! So many exciting things going on!

Another weekend that was full of stuff to do
I made a mean 'stew' today. Stew.....my mother called it. It's really a hearty beef vegetable soup with a tomato base. I grew up with it being called stew. My hubby let me know it was a soup, (probably cuz he thinks it can't be a meal without a meat, a potato, and veggies, on a plate). I tried to explain all that was in the 'stew' and with some cornbread........OH MAN IS THAT A MEAL! Southern style!! Yumm
I also made two, not just one oh no! I made two apple pies. I had a sliver about the size of a butter knife on it's side and OMGoodness was it good! Here is the best apple pie recipe I have ever used:
Grandma's Apple Pie
Preheat oven to 425 degrees
6 to 8 medium apples ~ I used 4 granny smiths and 3 galas
pie crust ~ I used Pillsbury that you unroll in a pie plate
put same sized apple slices in pie plate (not to full)
Measure these carefully in a non stick sauce pan:
1/2 C butter
3 T flour ~ I used wheat
1/4 C water
1/2 C white sugar
1/2 C brown sugar
Stir over medium heat for 5 minutes then pour evenly over apples.
You can use the second pie crust for the top.......or do what I did and put a crumble over the top made of the following:
1/4 C flour (again I use wheat)
1/4 C brown sugar
2 or 3 T butter
cut this using a fork or pastry cutter until 'crumbly' and spread/sprinkle on top of pie.
Bake for 15 minutes at 425 then lower the heat to 350 and bake for another 35 to 45 minutes
I know it's hard to do but wait till it cools before cutting!

It's the end of hump day and....
We made a trip to the local farmer's market and I picked up some grain and some dried fruit and dried green bean chips that were really good!
We walked in the Walk for a Cure and as a family we raised a total of 515 dollars! That was a great help to speed up finding a cure!!! and it was lots of fun and we met some really nice people and got some good information!
We canned 17 quarts of grape juice that is going to taste amazing in about 3 months. It wasn't too bad doing those especially when someone, (my good son), took all the stems out for me/him! Thanks honey!

The day of rest!
The yard sale is over and I am left with (what I think is) good stuff! Most of the items will go to the church/school sale that I help with once a year. Now that's a tag sale!!! Too bad it's the same weekend that the next town over has theirs! They have great clothes at that one....I have heard!
Today is the last day of hubby's vacation and I really appreciated his help in the yard sale, cuz without him, I probably would not have had it at all!
Now it's time to clean up the mess that I left in the house all week while preparing for it!
The blood sugars have been high and low through this process and it doesn't surprise me at all. Now this morning I am at 250 and I will take coverage plus extra for my coffee.
We (hubby and I) made great roasted chicken tacos with a slaw dressing for the top. It was so good. And with that I made some jalapeno poppers.
Yum! The tacos were from a recipe by Claire Robinson and the poppers were from Emeril Lagasse. Here are those if you would like to try them:
Chipotle-Lime Chicken Tacos
Ingredients
1 bone-in, skin-on whole chicken, rinsed and dried
Kosher salt and freshly cracked black pepper
1 lime, zested and juiced (lime halves reserved), plus 1 lime, zested,
1/4 cup water
1 cup crema
2 chipotle chiles in adobo sauce, finely minced into a paste
8 (6-inch) corn tortillas, warmed
Directions
Preheat the oven to 400 degrees F.
Generously season the chicken, on the outside and inside of the cavity, with salt and pepper, to taste. With your fingers, put some of the lime zest under the skin of the chicken. Sprinkle the lime juice over the chicken and put the halves into the cavity. Put the chicken in a roasting pan, breast side up, and add 1/4 cup of water to the bottom of the pan. Roast the chicken until the internal temperature registers 165 degrees F on an instant-read thermometer, when inserted in the thickest part of the thigh.
Remove the chicken from the oven to a carving board, let sit until cool enough to handle.
In a small bowl, combine the crema, minced chipotles, remaining lime zest, and salt and pepper, to taste.
Once the chicken has cooled, pull the meat from bones and shred.
Put some of the shredded chicken on each tortilla, top with chipotle crema and garnish with some zest from the remaining lime. Serve with lime wedges.
Grilled Corn Slaw
Ingredients
4 fresh corn on the cob, shucked
1/2 red cabbage, sliced
1 lime, juiced
Kosher salt and freshly cracked black pepper
1/2 cup crumbled queso fresco (cheese)
Handful fresh cilantro leaves, roughly chopped
Directions
Heat a grill pan over medium heat.
Grill the corn on the hot grill pan, turning periodically, until cooked and grill marks are all around the corn. Set aside to cool.
In a large bowl, toss the cabbage with the lime juice; season with salt and pepper, to taste, and set aside.
Once the corn has cooled, cut the kernels off the cob and add it to the bowl with the cabbage. Taste for seasoning and adjust, if necessary. Add the crumbled queso fresco and cilantro leaves and stir to combine. Serve as a side dish or use as a taco topping.
Notes
If you are not a fan of cilantro (the soap tasting folk), try flat-leaf parsley or even celery leaves.
I love to use a pinch of cayenne pepper or spicy paprika or even cumin instead of black pepper for a spicy kick.
To make this a creamy slaw side, try tossing in 2 tablespoons of Greek yogurt or whipped avocado!

Fried Kicked Up Jalapeno Poppers
Ingredients
Vegetable oil, for frying
12 fresh large jalapeno peppers
4 ounces cream cheese, softened
1/2 cup Monterey Jack, grated
6 slices bacon, cooked and crumbled
1/4 teaspoon Essence, plus 1/4 teaspoon, recipe follows
1/2 cup all-purpose flour plus 3 tablespoons, divided
1/2 cup milk
1 large egg, lightly beaten
1 1/2 cups panko bread crumbs
Directions
In a deep-fryer or heavy-bottomed stock pot add enough oil to come 1/3 of the way up the sides of the pan. Heat oil to 370 degrees F over medium heat.
Cut a slit lengthwise in each pepper down 1 side to create a pocket. Leave stem intact and remove seeds if desired.
Combine cream cheese, Monterey Jack, crumbled bacon, and Essence. Place mixture in a zip-top plastic bag or large piping bag. (If using a zip-top plastic bag, cut and remove 1 corner of the bag, large enough so that the bacon will squeeze through.) Squeeze mixture to the bottom of the bag and fill each pepper with as much of the cream cheese mixture as will fit. Press slit edges of the pepper together to seal.
In a small bowl, combine 1/2 cup flour, milk and egg. Place remaining 3 tablespoons flour, panko crumbs, and 1/2 teaspoon of Essence in a shallow bowl or plate, and stir to combine.
Working in batches, dip stuffed jalapenos into the milk batter and then roll in the panko mixture, pressing to coat.
Working in batches, if necessary, gently place jalapenos in preheated oil and fry until golden brown, 1 to 2 minutes. Remove from the oil and drain on a paper-towel lined plate. Cool slightly before serving, as the cheese is extremely hot.
I didn't have any essence of Emeril, so I used a little papricka, a little cumin, a little chili powder, and just a touch of seasoning salt. I added sea salt and cracked pepper to taste.
This took a while to prepare, longer that the 10 minutes stated cuz of the prep! but it was worth it! Dinner was so good and unusual for us.
I'm taking the left over roasted chicken and making a stir fry for dinner today, I think that will be quick and easy!

Labor Day is Over...Now it's Time to Work!
Hubby is on vacation and he is helping me get rid of STUFF. We are having a yard sale!! I even made great signs with my cricut!!
I'm so excited!! I've said it many times.....the first half of your life you collect things (STUFF! and the last half trying to get rid of it!! LOL Well, I'm way on my way. The hardest is getting rid of some of my mom's stuff I inherited! The broken and just sentimental stuff is the hardest. The old bingo bag and the eye glasses. I really miss her alto at times.......back to the matter at hand. : )
I really am trying to go through all that stuff!! I mean box after box after little containers. The old collectible lighters and key chains and "this I was saving for", most of you know what I mean.
And in between, trying to remember to check my sugar and eat correctly. A struggle I tell ya! It's been way high and way low and it's probably going to be the same today as I get busy. Got lots to do today.
I hope everyone enjoyed their holiday weekend.

A Saturday Gone
I woke up with a BS of 194, which is better than the day before which is in the right direction! With that number I took 4cc of N and checked an hour later and it was 269 after 2 cups of coffee fixed the usual way. So my deduction from yesterday was correct! And I still drank it again!! Tomorrow, NO COFFEE FOR ME! I took 12cc and and still didn't eat anything. I just don't want to eat the first part of the day. I know that it best in the morning to break your fast but I just didn't. Later my sugar was 104!!! Yay!! Finally!! Then I ate.................and took 10cc to cover what I ate, right? When I checked an hour later I was at 202. It's a roller coaster ride....I did warn you. Now before bed it is at 181 so I took 4 more cc's of N.
So now before bed as look back on the day, I wasn't really too productive but I did enjoy myself and that's what really counts, right?

Day 3 Already
My grandson spent the night in the hospital. He's 9 months now. He is pulling himself up on furniture and crawling so fast, I know he can't wait to run!! He swallowed a penny and it got lodged in the throat/chest area. They took him this morning, had to put an IV in his arm, sedated him and went in to get it. Thank the powers that be that he has such a good mom who was right on top of the situation!!
Hubby starts his vacation so time to work on the house! The garden is seeing lots of wear and tare! I'm having a problem with my raspberries. That is such a bummer. That's another thing on my list! I have to look up what to do about them. Does anyone know and want to share?
Well off to mark some stuff off my list before picking up the hubby.

Ok! Here it goes!
I have a lot on my plate right now.
I am helping keep my sister sane and calm while she deals with some very trying challenges in her life.
I am in the midst of fundraising for JDRF, Juvenile Diabetes Research Foundation, and so far that is going good. I do have one thing to make a decision about and that is: One gas station/store in my neighborhood said that they would most certainly sell shoes (JDRF's signature icon) for me. That was such great news, however, when I went to purchase something from there......no shoes were in sight and they didn't ask me if I wanted to buy one! Now I don't quite know what to do about that.
I just got through canning tomatoes for our garden. I had help from a friend for the second batch. And the hubby helped with the third. Thank goodness! I 'bout killed my back doing them so I'm thinkin' this might be the last year for salsa. : ) The first and third batch was Salsa!!! One peach and one batch pineapple mango!!! Yum yum are they going to be good this winter!
I have this sad connection with food!! lol I love it! It DOES NOT love me back though!
Another item I got caught up in was my son's issue with a local Stop N Go in his neighborhood kicked him out of the store because of his guide dog!!! Would not let the man come into the store with his EYES!! That was a story on the 10:00 Fox2Detroit New last night.
I am planning a murder mystery dinner to benefit JDRF and since I have never done anything like this before, it will have some bumps in the road!
And the last thing is making my cards. A family member told me that Hallmark sells or has a section for handmade cards, so I am finding out info on that! Is that everything? Oh of course not! I still have to drive my hubby to work and pick him up, clean the house, fix dinner, and watch the clock so I take my sugars regularly. Ok, I'm tired now that I wrote it all down on ?paper? LOL
So my sugars are up in the 200 to 300 range and it must come down if I want to live a life of productivity! Been doing a pretty good job except for that raspberry (from our garden)/apple pie I mad yesterday. Man O man was that good!!! And man did my body hate me for that. I'm still paying today, which was not a good decision! Each day we learn how to "rise above our raising" as Dr Phil says! Been eating a lot of salad, thank goodness I love salad! It has lots of veggies in it cuz I love veggies!

What a lovely day before the cold sets in again!
We have gotten so spoiled this past week with weather so nice you almost want to plant the garden! Not so fast though....this is Michigan and that would really be a waste of energy! We have not gotten our last snow and ice storm yet!

So I was watching The View this morning, cuz now it's 12:51PM, and they were going to show a sneak peek of a clip from Grey's Anatomy. So they cut to it and WHAM....my screen freezes up!!! Damn! That's AT&T u-Verse. It only does that when you really want to see something!
It appears as if this day wants to fight me, doesn't it? I'm NOT going to let it though. It's the last beautiful day for a little while and I don't want to fight with or about anything.
I called the Red Cross to volunteer as a babysitter instructor and was going to meet the woman yesterday but she had a family emergency and had to leave. I hope her grandpa is doing better.

Preparation
Test fabric's ability to tear along the grain line by making a clip in the selvage edge 1 1/2 inches from the cut edge and at least 1 inch deep. Grasp both edges securely. Pull gently and see if the fabric will tear along the cross grain. Limited puckering can be pressed out using an iron set on medium heat with steam. If fabric will not tear or there is excessive puckering or pulled threads, then square-cut the edge of the fabric by pulling a weft (cross-grain) thread.
Cutting
Tear or square-cut fabric as explained in Preparation.
From silk chiffon for body:
Measure 50 inches along selvage edge and tear or square-cut so fabric measures 50 x 45 inches.
From contrasting silk chiffon:
Tear or square-cut two 50 x 6-inch strips along the straight of grain (selvages).
Fold remaining fabric on the bias. Pin and press fold. Use a view-through ruler to mark a 1 x 28-inch strip along the fold (Figure 1). Cut along marked line for bias binding.
Assembly Note: Refer to Assembly Diagram (below) throughout.
Turn under and stitch a 1/2-inch hem on cut edges of body.
With wrong sides together, fold body piece in half, matching hemmed edges. Pin fold and press lightly for shoulder fold. Unfold, then fold again, matching selvage edges. Pin this fold and press lightly near center for center front/back fold.
Using air- or water-soluble marking pen, mark center front fold 2 inches from pressed shoulder fold; mark center back fold 1/2 inch from shoulder fold (Figure 2).
Mark shoulder fold 4 1/2 inches from center front/back fold. Using a French curve, draw the neck curve for the front, connecting marks at center front and shoulder (Figure 3).
Using a French curve, mark a line connecting the mark at the center back fold to the shoulder fold mark (Figure 4).
Cut out neck opening and mark center back fold line at the neck edge. Beginning at center back, with right sides together and raw edges even, pin bias binding around neck edge, leaving an extra 1 inch beyond center back mark at beginning and end for center back seam allowance.
With right sides together, stitch center back seam in binding (Figure 5). Trim excess. Press. Sew binding to neck edge using a 3/8-inch seam allowance. Clip seam allowance 1/8 inch deep at shoulder curves to ease binding into these areas.
Press seam allowance toward binding. Carefully trim excess allowance. Edge-stitch binding 1/8 inch from seam line, catching seam allowance. Turn binding inside neckline. Pin in place and press lightly from wrong side. Beginning at center back, with binding on top, top stitch 3/8 inch from neckline edge. Press.
Pin right side of each contrast strip to wrong side of body along one selvage edge, with edges even, allowing contrast strip to extend at least 1/2 inch on each end of body (Figure 6). Sew, using a 1/2-inch seam allowance. Press seam allowance toward body.
Press under 1/2 inch on remaining long edge of contrast strip. Fold strip with right sides together and stitch across ends so stitching lines are even with body hems (Figure 7).
Turn and press. Pin contrast fabric over body seam allowance so edges of contrast fabric are even. Edge-stitch 1/8 inch from edge of fold (Figure 8).
Fold body with wrong sides together along shoulder seam. Measure 13 1/2 inches from each end. Mark 13 1/2-inch lines parallel with ends of garment. Stitch along line, securing beginning and ending of stitching. Remove basting threads.
And here is your finished project!

Just a beautiful day!!!
Had a very busy week. My son came out on the train and I picked him up Tuesday early afternoon. We had a nice visit with Grandma while she got her hair and nails done. Then we picked up the hubby and helped out a work friend with his truck that had broken down. Later we had roasted chicken, taters, corn, carrots, and green beans! Big dinner for a Tuesday night!! Then we got ready for the big appointment at U of M. Got the showers, the paperwork, and everything the child brought with him together cuz I was takin' him home after the very early appointments. Only that's not what happened!.......He woke me up at 12:30 AM with what he thought was a heart attack!! Yikes!!! OMG I was as freaked out as he was! His blood pressure was 205 over 105 and we were both scared! So EMS was called and he described his pain as pressure just right under the sternum. We (hubby too) went to wait with him in the ER to get the results of the tests. Good news was nothing showed on the EKG but the chest ex ray did show a bubble of air just at the bottom of the sternum. Then we knew, IT WAS GAS! Thank goodness! They kept him overnight to observe him. When the heart doc came in with the news that the enzyme tests had showed no damages to the heart occured they released him. We were lucky enough to get an appointment at U of M with the kidney specialist on Friday. At least he didn't waste his trip and we got ok news from the specialist. He can go ahead with the heart cath with the understanding that it may put his kidneys at risk, but the odds are in his favor about 70/30. He says if it puts him into renal failure, he can be put on the transplant list and receive a new kidney and pancreas, and that will make him DIABETIC FREE!!! From his mouth to God's ears! He was told by the heart doc, the kidney doc, and the mom (me), to never hesitate to call EMS if it happens again. He is at high risk for cardio problems because of the diabetes, so he should never feel bad about calling EMS if he feels strange or different! He said he felt like an idiot and hubby just came up with a new nickname (bubble boy) for him after assuring him better to be safe than dead! Let that be a lesson to all of us!
We also learned that his step daughter may have cancer again! She has to go to Children's Hospital on the 11th for a MRI. We are praying that the nose bleeds and headaches are from something else. I hate to see her fight that battle again! Please keep Breanna in your prayers.
As always, when it rains, it pours. What we must remember is how we observe and deal with our challenges is very important to not only us but to the world as a whole!

Just another day in paradise!
So last time I wrote I expected the doctor to call and she did. She made no changes so I guess I'm on the right track and hoping I land in the right place! This morning, as with most mornings, I had a good bread source with egg whites on top and added some 2 % cheese to make a sort of egg "mc"muffin. And for lunch it will be some veggies, "hard chews" as a doctor in New York wrote about. That book is CARB CAREFUL SOLUTION by Dr. Adele Puhn. I think I am going to dig it up and start that "diet" again. I did wake with normal sugars and I was eating every two hours. Yep, I think that is what I will do!!
My hubby is eating London Broil, potatoes, and broccoli tonight! I will be eating the broccoli part of the meal!! LOL And he gets a cake tonight for dessert! Wow am I a good wife, or what? lol
After I did up that book, I have several birthday cards to make for March! The last week in March is known as "birthday week" around here! My daughter's is the 22nd, mine is the 26th, and my son's is the 28th! Then we sprinkle in a granddaughter, a niece, a couple of nephews, and a couple of friends! Yes it will busy in the craft room!! LOL Good thing I love that kind of stuff!
I received some more pictures of my newest cutie pie! He is growing faster that a weed! I can't wait to kiss those scrumptious cheeks!

I didn't send any Valentine cards out this year. I have got several birthdays coming in March and I have to start on those cards soon! It comes fast when you aren't paying attention! lol Here's a B-day card I made for my hubby 3 weeks ago:

Please excuse the appearance of the layout of these pictures....I still don't know what I'm doing...however, I am learning everyday. As a matter of fact, does anyone know what Google Friend is all about? I am working on that this week! gonna find out where to put the codes if it's last thing I do! AH ha ha!
So the top card is made from the Stampin' Up class I used to attend. I used a tool which rocked back n forth to create the wood grain look and the pheasant was stamped on a glossy paper with a circle "jig" so that the moon showed slightly. Then it was chalked in to give the pheasant life!
The second card was also done at the SU class. We first punched a decorative square hole and then ran the white paper through a cuddle bug. The flowers were stamped as a 2 part stamping. The little window was punched so that the flower could be seen from the front! A little glitter and voila'!!! a beautiful card! (could thing the teacher was close lol).

Well my numbers have been all over the place this week. As low as 119 in the AM to as high as 331 in the AM. That's quite a spread! I'm thinking seriously about going raw for a couple of weeks and seeing how that works for me. All boils down to, can we afford that? Fresh veggies are really getting soooo expensive! I am still doing research on the subject. I took some celery root soup out of the freezer for lunch today. Yum
I will come back later to give a synopsis of the food I ate today and with a recipe.

It's finally Monday!
The Saints went marching on the Colts behinds!!! Apparently it was a good game! LOL I was in the kitchen making dinner and heard some of it. I, along with a lot of other people, are glad that they won. Congrats to the Who Dat nation!!
This is just a quick note. Hubby worked days today so I have do things a little different. It's good to change your routine around, right? Throw a little oh shit in to the mix of life. My sugars were pretty good this weekend. Hope you had a good weekend also.

It's just Friday....
So this morning I got up quite early for me as I watched the baby all night to let the kids get some uninterrupted sleep. My number was 136 at 9 AM and at 1 PM it jumped up to 198 and all I had was 1 cup of coffee with a sugar substitute and some dry coffee creamer!!! Now what the heck is that all about???!!! HELLOOO!!! Is there any Lantus working in here???? I have kept up with my numbers but they totally suck!! I will be faxing this to the doctor on Sunday night so she will have it bright and early Monday morn and can adjust it a little.
I took a little break, bet you didn't even notice! So now it is Saturday the 6th and man what a day yesterday was! I was so busy I didn't eat breakfast but had a great lunch. I made quessodias (enough for today and Sunday!). 1/3 less fat cream cheese with no fat ranch dressing was the first layer! Then I added a big pinch full of 2% cheese, a tiny bit of chicken (yes I am no longer a full fledged vegetarian), some corn kernels, some green onion, and my homemade peach salsa! Yummmmm it was good and filling! I took 10 units of insulin.
Before dinner my number was 102!! Yay!! A good one!! For dinner I had 1 whole wheat pita cut in half (34g) with 2 teaspoons of honey mustard (6g)(one on each half) then I took a little chicken (maybe 2 oz total), and added sliced tomato and lettuce! Quick and easy! Added 1/3 cup of raisins (31g) and that totaled 71 g. So I took a shot of 8 cc of insulin. I had nothing else the rest of the night. At bedtime my sugar was 184!!! WTH!! I took 4 more cc's and went to bed! Today I woke with a 190!!!! WTH!!! I took another 4 cc's and am drinking 1 cup of coffee with sug sub and creamer (I ran out of decaf tea). On to fight some more!
Let me tell you about last night when I went to pick my hubby up from work. I went to start the car at about 11:25 to warm it up. I got the bright idea to use the spare key to start it and to use the do hickey to unlock the doors when I was ready to leave. Sounds ok, doesn't it?? Well it did to me at the time!!! Then it was time to leave. I got the dog and headed out....hit the button to unlock the door.....and it didn't open!!! Oh no!!! What the hell is going on???? Hit the button over and over and nothing!!! I tried the key in the keyhole but those haven't worked in years (the car is 11) because we never use the keyhole, always the button!! Oh shit!!! I tried the key in the trunk keyhole but it was useless! Then i began thinking it was a safety feature!!! WTH!! I had to wake my good neighbor up (thank you so much, AMY) and ask her to drive me to get hubby and when we got home he squeezed a wire through the window and touched the window button to lower the window and open the door. He thought maybe the battery was gone in the do hickey but NO! It is a SAFETY feature!!!
DO NOT DO WHAT I DID!!! Oh what a night!!!! LOL
So I thought about changing the format a little and I think this will work better for me: I think I will post in the evening after dinner and that way I can sort of keep a food diary and the insulin I take to cover the carbs. I hope this will give me a better understanding of what I eat and how much I eat.

I did find this soup that looks so good I am going to try it this weekend! It comes from the Whole Foods website:
Zesty Mexican Soup
This spicy vegetable soup is full of flavor and easy to prepare. Our Healthy Sauté method of cooking makes this recipe healthier since you don't have to use heated oils. This soup is a great way to get many vegetables into one meal. It actually gets better with time, so feel free to make a big batch to have around. It is a perfect quick meal on a cold day.
Prep and Cook Time: 40 minutes
Ingredients:
1 medium onion, minced
4 medium cloves garlic, chopped
2 TBS red chili powder
3 cups + 1 TBS chicken or vegetable broth
1 small to medium green bell pepper, diced into 1/4-inch pieces
1 small zucchini, diced into 1/4-inch pieces
1 cup finely chopped collard greens
1 15 oz can diced tomatoes
1 15 oz can black beans, rinsed
1 cup frozen yellow corn
1 4 oz can diced green chili
1 tsp dried oregano
1 tsp ground cumin
1/4 cup chopped pumpkin seeds
1/2 cup chopped fresh cilantro
salt and pepper to taste
Directions:
Heat 1 TBS broth in a medium soup pot. Healthy Sauté onion, garlic, and green peppers in broth over medium heat for about 5 minutes, stirring often.
Add red chili powder and mix in well. Add broth, zucchini, collard greens, and tomatoes. Cook for another 5 minutes and add beans, corn, green chili, oregano, and cumin.
Bring to a boil on high heat. Once it begins to boil, reduce heat to medium-low and simmer uncovered for 15 minutes longer. (Simmering uncovered enhances the flavor.) Add chopped cilantro, pumpkin seeds, salt, and pepper.
Serves 6

Healthy Cooking Tips:
For the best flavor it's important to chop the collard greens very fine. In doing so, their flavors blend better with the other ingredients and are easier to eat. If they are too big, they may taste too bitter.

Did anyone see the Oprah Show yesterday? She had some people on from the new show Undercover Bosses. The boss of a company works a day or so in an entry level position next to his employees to get their prospective on life. This is such an inspiring show and my hopes are that the other employees in these companies get the benefits that are shown to the workers that they feature on the shows. It debuts after the Super Bowl.
Not much going on today, the hubby has to go into work early again today so I gotta get going. Let me know your secrets Your health tips. Your opinion . Your cooking tips. I am looking for some delicious recipes to try and post soon.

My son is now home and doing pretty good since he found out why he has been feeling a little dizzy lately. He was taking a medication that was increased and he didn't know that he must cut the pills in half for correct dosing. (He can't see the directions) So he was taking more than was prescribed. Now there's a problem that needs to be corrected!!! If only I had the know how and some cash!! LOL
So my new scale was set to 46 units of Lantus and a Novolog scale of 1cc of insulin to 10g of carbs plus 2cc to for every 30 over 150 reading. I don't really see how that's gonna bring the sugars down, but I trust the new doctor and maybe she knows something I don't about diabetes! I don't see how that can be, but we'll give her a shot!!!
I started this blog to be accountable to myself and it hasn't worked out quite that way!! So I decided to change my format a little and actually give a more detailed and "for real" way account of what I eat and how much I am eating! Oh boy, this is a big step for me!!! Here I go! Are you with me??? This is the sheet that the doctor gave me to record the BS's:

I'm back! Did you miss me? Ha ah funny I know! (lame) So I had to start a fire....in the fireplace.....and I used wet wood !! I know , right?! Hubby got called in to work early and didn't have time to get the dry stuff, so I got the wet. Life goes on.
Here is my personal numbers since seeing the new doctor:
My goal is to stay at one number with little variation, right?? This so difficult because of all the variables like measurements, blood monitors uncalibrated to 0 every test, the ingredients not listed correctly, and above all fruit is not exact every time! Not to mention that it's also difficult to watch the clock so you can make sure to eat the stuff you have to eat like(fiber,fruit,grains) Numbers are never going to be the right level at the right time until a pancreas transplant, which is getting ever so closer!!! Hopefully in time to save my son from his inevitable early departure from this world.
Had to check the fire again, which is roaring now! My sugar is going low and so I must take a break and eat something healthy! (Smiles) And that means cooking and measuring!! Yay! Not really! it's just acceptance, folks! lol
